1 lb Extra Lean ground turkey
1 small onion
1 (20 ounce) can enchilada sauce
10 flour tortillas
1 cup shredded reduced fat cheese of your choice
1 can sliced olives
Low fat Sour cream for a topper
1- Chop up the onion and brown a little bit in a pan.
2- Throw ground turkey on top of the onion, and sprinkle with a little chili powder, garlic powder, a little cumin, and a little splash of enchilada sauce to season the meat. Brown till almost cooked.
3- Once almost cooked pour about 1/2 cup of the enchilada sauce over the meat, and finish cooking.
4- Place a couple spoonful of meat mixture into each tortilla and roll.
5- Spray a 9x13 baking dish with pam and pour a little bit of enchilada sauce in the bottom. Then place the rolled tortillas into the dish.
6- Cover rolled enchiladas with remaining enchilada sauce, and sprinkle with the sliced olives.
7- Top with cheese.
8- Bake at 350F for 10-15 minutes until heated through and cheese is melted and sauce is bubbly.
