I think my ridiculously long quest to find an easy way to cook enough chicken for several meals during the week is finally at an end. I ran across this great post on dashingdish.com on how to make shredded chicken in the crockpot. I am not a huge crockpot cooker because I really hate waiting for food, but if I can cook up 4 chicken breast on Sunday that will feed me for the rest of the week then I am one happy lady.
I used Trader Joes frozen chicken that you get in the big bag (that is super inexpensive). Now, I've read Trader Joe's does something special with their freezing process so you don't have to thaw it before you cook it. And seeing that I have such a problem with raw chicken I just threw the frozen chicken in the pot to see how it would do. I also read that if you use frozen chicken in a crock pot you have to cook it on high not low.
So I just placed chicken in the crock pot with enough broth and water to almost cover the chicken. I think I threw in a little Tejin salt, pepper, seasoning for added flavor, but garlic powder would do just as well. Cover and let cook for 4 hours on high (it did come out a little dry after 4 hours, probably because it was frozen so I will cut down on the cooking time next time I make it) . After cooking shred chicken with 2 forks. I ended up making chicken enchiladas, shredded chicken tacos, and chicken salad sandwiches with it. All were very different dishes because of the different spices I added to it, but all were SUPER easy because the chicken was already made. Now if I can just remember to cook the chicken on Sundays to have it prepared for the week to come I would feel like an unbelievably productive person. The odds of me remembering that are low, but I am extremely happy that I have the option none the less.
I finally got a little time alone, and was in the Christmas spirit enough to decorate a little bit. This Christmas season has just been so strange. But now that I'm basking in the glow of the Christmas Tree lights with some tea under my warn snugglie blanket all seems right with the world. LET THE FESTIVITIES BEGUN!!!
Ok, I think I might have just fallen in love with this little picture. I would SOoooooo love little gingerbread houses with my tea. And look at the little trees on the front of the houses! And they are designed to fit on the edge of the mug!!! So cute!!!! I found it on designrulz.com and there is no information as to where to get them. But I want them sooooo much it hurts!!! It reminds me of the Kiki K holiday organizer. I almost bought it because the cover is so cute, but I know I would never get around to actually using. They came out with such a cute line of stationary this holiday. Unfortunately, the second December hits the whole month just zooms by and I usually completely forget to use the cute Christmas stationary I've bought. So I saved my money to spend at her shop for another time.
These Slow Cooker Mushrooms were a HUGE hit at Thanksgiving, HUGE! I did make a few changes though... of course. I cut WAY back on the butter, because the mushrooms will expel a TON of water so it will have enough moisture no matter what. Also, be warned that the mushroom cook down like you wouldn't believe. I started with two big packages of mushrooms, and I cut them all in half because they were big mushrooms. When they all cooked down I was left with barely enough for 4 people. Thank God this was only for an appetizer, and not as a side dish. I served them simply in a bowl with toothpicks next to them, and some sliced bauette next to them just in case people wanted something to put them on. I left for a second, and when I returned they were all gone. I think I will make some this week so I can taste them.
2 boxes of mushrooms
1/4 cup of melted butter
1 envelope Ranch salad dressing mix
a few shakes of Parmesan Reggiano cheese
Mix melted butter, ranch dressing, and Parmesan. Pour over mushrooms and cook in crock pot on low for 3 to 4 hours or in oven at 300 degrees for 30 minutes.
These are great inexpensive pom pom perfect for filing in areas with Christmas cheer.
